Abalone Scampi, Microwaved Prep Time: only 5 minutes, excluding marinating time!This recipe will be even tastier if you marinate the abalone in butter and garlic the day before. Caution: Do not overcook - the abalone will become very firm if overcooked. Ingredients: 12 tenderized abalone 4 ounces butter (1 stick) 2 teaspoons crushed garlic 1 lemon Salt and pepper to taste Instructions: Melt butter in microwave, 1 to 1.5 minutes, remove from microwave and add crushed garlic to butter, stir. Microwave 1 minute more on medium until garlic softens. Pour half of the butter garlic sauce into the bottom of a wide glass pan, such as a glass pie pan. Add tenderized abalone to pan and pour remaining butter and garlic over abalone. Microwave 1-2 minutes on medium-high, remove from microwave, turn abalone over, return to microwave and cook until just tender, 1 to 2 minutes more. Season with salt and pepper to taste. Divide abalone between 3 or 4 serving dishes and drizzle with the melted butter and garlic remaining in the pan, sprinkle with chopped parsley if desired. Accompany with lemon wedges and crusty bread.
